Tofu San Choy Bow

As mentioned in my Prawn Dumpling blog, I was given a voucher for a cooking school in Mount Tamborine last year. One of the recipes I was most excited to learn was the Tofu San Choy Boy. I've had a few unpleasant experiences eating tofu, but I am determined to include it into my diet. And I think this recipe is a great introduction. The recipe is super easy & it is low in carbohydrates, which is great! Honestly, give this recipe a go & I think you will be pleasantly surprised. Ingredients

  • 500g Tofu (firm)
  • 1 cup Mushrooms
  • 1 Brown Onion (cut into quarters)
  • 1 stick of Celery (chopped)
  • 2 tablespoon Hoi Sin Sauce (heaped)
  • 1 tablespoon Ginger (grated)
  • 1 tablespoon Garlic (grated)
  • 1 tablespoon Peanut Oil
  • 1 Spring Onion (sliced)
  • 1 Lime (to taste)
  • Lettuce cups (as many as required)

Method

  1. Place celery, onion & mushrooms in a food processor. Pulse until finely chopped. Add oil to pan & saute mixture along with the garlic & ginger.
  2. Chop up the tofu into cubes & place it into the food processor. Pulse until it resembles mince texture. Add to the cooked onion & celery mix. Stir tofu until heated through.
  3. Add the hoi sin sauce & simmer mixture for approximately 1 minute - or until sauce has thickened to your liking.
  4. Take mixture off the heat & squeeze over lime juice & sprinkle chopped spring onions.
  5. Spoon into lettuce cups & serve. 

If you are not keen on eating tofu, you can replace it with chicken or turkey mince. I have done this & it turned out just as nice.

After cooking the onion & celery mix - I removed it from the pan & set it aside. Then I sauteed the chicken mince separately & added the mixture back into the pan. Then I followed the remaining steps of the above recipe.
