Lactose Free Vanilla Slice

Over the Christmas period, I indulged in copious amounts of food. One of my Aunties brought vanilla slice - but alas, I could not eat it (insert sad face). So I thought I would try to make a lactose free version. Now some may say that my using premade custard & puff pastry is cheating - but I don't care. The result was pretty good for my first time & I will definitely be making it again! Next time (if I have the time/patience), I will try and make my own custard. But please see recipe below;

Ingredients

  • 2 x 1L Zymil Vanilla Custard
  • 4 sheets of Puff Pastry
  • 1 tablespoon Vanilla Paste
  • 2 tablespoon Cornflour (you may require more, depending on the consistency you are after)

Icing

  • 2 cups Icing Sugar Mixture
  • 20g Butter (melted)
  • 2-3 tablespoon Passionfruit Pulp
  • 170g (2 cups) Shredded Coconut (for decoration)

Method

  1. Preheat oven to 180°C (fan-forced). Line 2 baking trays with baking paper. Place 1 pastry sheet on each prepared tray. Bake until puffed & golden. Cool for 5 minutes, cover with a tea towel. Using your hands, gently press pastry to flatten.
  2. Empty custard into a saucepan & add in vanilla paste. Bring custard to the boil & add in the cornflour, whilst stirring/whisking. Take the custard off the heat & allow to cool.
  3.  Line slice pan with baking paper, allowing 3cm overhang on all sides. Place 2 pastry sheets in prepared pan. Pour the cooled custard over pastry. Top with remaining pastry sheets & cover. Refrigerate slice for 4 hours or until set.
  4. To make icing: Place icing sugar & melted butter into a bowl. Stir in passionfruit pulp until a spreadable/runny consistency forms. Spread icing over cooled slice. Refrigerate for a further 10 minutes or until set. Cut into squares, serve & enjoy!
