Lactose Free Butter Chicken
A few nights ago, I posted a picture of my yummy homemade butter chicken dinner on Instagram & I have had a few people ask for the recipe. So here it is;
Ingredients
- 500g Chicken Breast (you can also use Chicken Thigh)
- 300ml Thickened Lactose Free Cream (I use Zymil)
- 1 MAGGI Butter Chicken dinner base sachet
- 1 medium onion - sliced
- 1 carrot - grated
- 1 cup of peas - frozen
- 2 tablespoons Nuttelex
- 2 tablespoons Tomato paste
- Salt & pepper
Method
- Cut up onion, grate carrot & chop up chicken, then set aside.
- Put butter, salt & pepper into a medium heat frying pan. Once butter is bubbling, add in the chicken until browned.
- Add in onion, carrot and peas. Cook until vegetables have gone soft.
- Add MAGGI dinner base into the pan. Once the spices have coated the chicken, pour in the lactose free cream.
- Mix in tomato puree and stir until combined.
- Serve with steamed broccoli & rice - enjoy!
