Lactose Free Butter Chicken

A few nights ago, I posted a picture of my yummy homemade butter chicken dinner on Instagram & I have had a few people ask for the recipe. So here it is;

Ingredients

  • 500g Chicken Breast (you can also use Chicken Thigh)
  • 300ml Thickened Lactose Free Cream (I use Zymil)
  • 1 MAGGI Butter Chicken dinner base sachet
  • 1 medium onion - sliced
  • 1 carrot - grated
  • 1 cup of peas - frozen
  • 2 tablespoons Nuttelex
  • 2 tablespoons Tomato paste
  • Salt & pepper

Method

  1. Cut up onion, grate carrot & chop up chicken, then set aside.
  2. Put butter, salt & pepper into a medium heat frying pan. Once butter is bubbling, add in the chicken until browned.
  3. Add in onion, carrot and peas. Cook until vegetables have gone soft.
  4. Add MAGGI dinner base into the pan. Once the spices have coated the chicken, pour in the lactose free cream.
  5. Mix in tomato puree and stir until combined.
  6. Serve with steamed broccoli & rice - enjoy!
