Lactose Free Carbonara

There is nothing better than sitting on the couch enjoying a creamy home made pasta dish. Unless you're Lactose Intolerant and in that case, your s**t outta luck!

Before I found out I was Lactose Intolerant, I would make my Chicken Carbonara dish ALL the time! If I was making dinner for a special occasion, that was my go-to. Needless to say, it was a sad realization when I found out I could no longer make/eat this dish. That was until I learned about Lactose Free products.

So here is my tummy friendly, lactose free, deliciously modified recipe. If you give it a go, please give me your feedback!

Ingredients

  • 500g Chicken Breast (diced)
  • 2 tablespoons Olive Oil
  • 1 300ml tub Lactose Free Thickened Cream (I use Zymil)
  • 250g Bacon (chopped)
  • 1 Brown Onion (chopped)
  • 2 cloves of garlic or 1 teaspoon minced garlic
  • 1 handful of Lactose Free Shredded Cheese (I use Liddells)
  • Fettuccine
  • 1 teaspoon flour
  • Salt & white pepper - to taste

Method

  1. Add olive oil to frying pan. Chop up bacon, onion & garlic. Add into hot frying pan & cook until bacon starts to brown & the onions go translucent. Remove onion & bacon mixture & set aside.
  2. Add additional olive oil to frying pan. Add diced chicken & cook until browned. Once chicken is cooked, return bacon & onion to frying pan.
  3. Pour cream into frying pan & mix all together. Add in cheese & allow it to melt. Add flour to thicken sauce to your desired consistency.
  4. Cook pasta in a separate pot as per instructions. Once cooked, drain & spoon carbonara sauce directly onto hot pasta.
  5. Serve & enjoy!

Note: You can add in Mushrooms & Parmesan cheese should you wish.
